Our Products Don't Look and Taste Exactly the Same Each & Every Time
That's a Good Thing!
Serving as a broker of small Virginia Farms that produce artisanal breed Cattle, Hogs, Lamb and Game Birds, we specialize in being able to link Premium Breeds of livestock to the community and offer certain cuts from entire animals. Customers have the opportunity to view pictures of their animals grazing on fresh grass and are aware of the whole process, such as slaughter date and aging time well in advance. In addition, we supplement our stock with premium products that stand above restaurant quality.

In the age of ‘Mega-Supermarkets,’ consumers are all too often used to buying products that are bred and produced in mass, facility production where it has been engineered to look, taste, and be exactly the same each and every time. For example, the pork industry has coined the slogan, ‘Pork: The Other White Meat,’ and unknowingly, most people think that pork is supposed to be white and lean. However, the flesh from foraging Tamworth Hogs is darker in color with extreme marbling which not only results in a more tender cut, but also has a flavor all of its own and is unique to the climate and environment in which it was raised.

As you begin your adventure of developing your palate for different breeds of Cattle or Hogs, you will find that some breeds will be more preferable to you than others. Some people will like one breed of cattle raised strictly on grass. Some will desire grain finished cow and some will adore the taste of dry-aged beef, while others do not. It is interesting to note that the same breed of cattle may have an entirely different flavor raised on a farm 15 miles away just because of the different grasses it has foraged on.

 

 

 
 

'Beef is Similiar to a Fine Wine'
Beef is very similar to fine wine and can vary accordingly to such things as climate, drought, quality of feed and the quality of last season’s hay. One year’s ‘vintage’ can be extraordinarily better than the year before. Its quality can be determined and described by different nuances such as earth, mushroom, almonds, toast and notes of spice that can be detected on the finish. All of same similarities that make a good bottle of wine vary in its flavor profile from year to year depending on the harvest conditions.

We encourage you to sample selections of beef, pork, lamb and seasonal game birds from different farms and from different breeds and at different times of the year to determine which ones become your favorite.
